The Story:
French toast = delicious!
The Recipes:
Orange Vanilla French Toast (modified from a recipe from my Great Aunt Suvilla, who is unwell, but a wonderful woman!)
makes 8-10 slices
4 large eggs
1 cup milk
1/2 teaspoon vanilla extract
1 teaspoon white sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon orange juice
8-10 slices French bread
Beat all ingredients except bread in a shallow dish.
Dip bread slices, one at a time, into egg mixture, turning to coat.
Cook bread in greased nonstick skillet, over medium heat, about 3-4 minutes on each side, or until golden brown.
I keep them hot as they come off the stove by sticking them on a platter in either the microwave (it's insulated and will hold them at a warm temperature), or in a warm oven (but use oven mitts to take them out--the dish gets hotter then you'd think).
Serve with butter, syrup, powdered sugar, fresh fruit, jam, or whatever you like. Serves four.
Baked French Toast
serves 2
1/2 stick butter
1/4 cup brown sugar, packed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup milk
1/3 cup cream
1 teaspoon vanilla extract
4 large eggs
6 slices French bread
Melt butter in 8"x8" dish.
Mix sugar and spices. In pan, over butter, layer 1/2 sugar mixture, 1/2 bread, 1/2 sugar mixture, 1/2 bread.
In small bowl, beat milk, cream, vanilla, and eggs; pour over bread.
Bake 35 minutes at 350° F.
Or, prepare the night before, cover and refrigerate overnight, and bake a little longer.
The Verdict:
These are both pretty delicious, if I do say so myself. Another way to dress up pancakes/waffles/French toast, etc. is to sprinkle berries or fruit, then powdered sugar, then milk/cream over them, which is simply scrumptious.
